Quick salmon with roast veg

  • Skin-on salmon
    • Aldi $15.00
  • Birds Eye Frozen Seasoned Mediterranean Mix
    • Coles $5.00

Steps

  1. Preheat your oven to 220 celsius.

  2. Line two oven trays with baking paper. This makes the clean-up easier.

  3. Open the packet of frozen vegetables. Spread evenly across one of the trays.

  4. Place tray of vegetables into the oven.

  5. After half hour, do your best to flip the vegetables to crisp them on their underside.

  6. Place the salmon on the second lined tray. Season the salmon to your pleasing.

  7. Oven bake the salmon for 15 minutes.

  8. Remove the salmon from the oven and leave to sit for a few minutes.

  9. Serve.
